After pressing the wine is racked to French barrels, 50% three years old, and 50% four years old where the malolactic fermentation takes place. 100% Nebbiolo grapes from our younger and less exposed vines, which produce less concentrated fruit. Vindabeive is our picnic wine! It's the juicy result from a carbonic maceration of Nebbiolo which comes from the higher part of our vineyards and we pick a little earlier then the rest. Grapes spend five days on the skins, roughly half as whole bunches, before being pressed off to cuve for just a couple of months. The wine was bottled just a few months after the harvest, retaining a beautiful vibrancy. With just a hint of tannin, this light, bright and easy take on the grape is just the thing for your next barbecue.

50% Chardonnay, 50% Wei??burgunder. Spontaneous fermentation in new 1200L oak barrels (called St??ckfass). Aged in those same for seven months, then moved into inox tanks for four months of settling. Unfined, unfiltered, 25mg/L SO2 added. Dominik says this wine is probably the most ?€?classical?€?in his lineup: you?€?ll see the lightest influence of the new wood, which he calls ?€?a little bit of 90?€?s kitsch,?€? with light notes of pineapple and coconut, but there?€?s still great tension, lovely structure, and fine acidity.

There is an alluring blackberry fruit with an edge of violets and a hint of liquorice. The grapes were picked very ripe and then allowed a five-day maceration before fermenting entirely as whole bunches, mainly pumping over and punching down lightly at the end. The grapes come from two parcels, one at the base of the slope replanted 10 years ago, the other at mid-slope. The soils here are compact clay and yellow marl that give a very lush result.

The Unico released in 2021, 10 years after the harvest, is the 2011 Unico, selected from 40 of their 210 hectares of vineyards. 2011 is a concentrated and ripe vintage, and they selected 95% Tinto Fino (Tempranillo) and 5% Cabernet Sauvignon that were cooled in a cold room for 24 hours before being sorted; the bunches and grapes macerated at 9 to 10 degrees Celsius for three to four days, and then it was inoculated with a pied de cuve to ferment with pumping overs. Malolactic was in stainless steel, and the wine was put through a long aging, 10 years between oak and bottle, using new and used French and American oak barrels and 20,000-liter oak vats. For Vega Sicilia, 2011 was a fresher year than 2010, not the common idea about those vintages in Ribera del Duero. The wine has a developed nose with some notes of ripe black fruit, meat and underbrush, somewhat herbal and perfumed. There is something about the nose of the Unicos that I cannot quite describe but is quite distinct, and it's in this vintage and also in the Reserva Especial.

The 2019 Barbaresco Riserva Ovello is powerful, savory and intensely linear, in classico Ovello style, and yet it appears to have enough fruit behind its imposing tannins to develop well over the coming years. In this tasting, the Ovello feels pretty closed post bottling, but its inherent balance and qualities are there. Clean saline notes extend the finish in promising fashion.
