Blanc de Noirs is a Champagne from a selection of parcels chosen for the quality of their grapes. All parcels are vinified separately, which shows exactly their characteristics. The base wines are aged on fine lees, in vats, for 18 months, before blending. The aging on fine lees of the wines makes it possible to highlight its aromas. The wines are not filtered so that they keep all their material and their complexity, which also gives them a much higher potential of protection and longevity. After cellaring and disgorging, the Champagne will be aged for at least 6 months in the cellar.
Tenth generation winemaker of a large Burgundy family, Bruno de Villepin settled in Champagne in 1999 on the family property, purchased by his great-great-grandfather to the Duchess of Uz??s, granddaughter of Veuve Clicquot. 2.12 hectares (5.25 acres) of vineyard, composed of 55% of Pinot Meunier, 30% of Chardonnay and 15% of Pinot Noir. The continuing effort to reduce the environmental footprint of its viticulture practices, a gentle and meticulous oenology, without filtration, and some parceled vinification since 2008, when he set up his winery. He started marketing at the end of 2013 with two vintages, the 2008 vintage and the brut Champagne. Bruno continues his labor-intensive work in the vineyards, so the vines can grow the best grapes possible, from one year to the next. The quality of the wines depends mainly on what is done in the vineyards, from the
plantation, through the size, the trellising and the grape harvest. Bruno has worked towards organic certification over the past few years and will be fully certified in 2024.

There is a new range of not-so-old wines from different styles, like the NV Oloroso Criadera Selection, a gentler and younger wine with around 20% alcohol. It was produced from the soleras and criaderas dynamic style of blending vintages, and it aged in topped-up barrels without flor in an oxidative style. This is a little darker and younger than the Amontillado and Palo Cortado, gentle, with a peachy nose with some spiciness from the old wood, low-pitched, wider and warm. It's tasty and long. Only 690 bottles were produced. It was bottled in December 2023.

The 2022 is just a touch sweet with 5.7g/L residual sugar and a little bit of malic acid left too. Weather was a bit extreme in 2022, but the Gewurz came in at the end of August before the heat wave or the rains. They are really happy with Rick's! Acid is present, but the wine is not overly lean or austere, the fruit is savory and the aromatics are a little more pronounced than the last few vintages. The end result is still a relatively subtle, but distinctly aromatic wine that is true to the variety.

The barrels were blended and a small sulfur addition (30ppm) was made before being bottled unfined and unfiltered. 11.8% abv

Vinification Method: Grapes are hand-harvested, destemmed, and macerated in open-topped wooden vats for 20 days without refrigeration. Hand punch-downs are performed about 4-5 times per day. The skins are pressed to stainless steel tanks for about 4 days at cellar temperature. Then the wine is racked, with the fine lees, to 2500 and 500-liter oak barrels for elevage.

There is a change in the 2022 La Canoca, as this year it's no longer a single-vineyard wine but a paraje, or lieu-dit, wine that includes more plots from the same place. Therefore, volumes have grown from 500 bottles in the previous vintage to 3,200 in 2022. This is surprisingly fresh, harmonious and elegant, getting closer to the character of the 2021s, closer than any of the other 2022s. It slowly opened up in the glass to floral notes, hints of wild herbs and crushed stones. The palate is solid and complete, with fine, chalky tannins and a long and tasty finish. It was bottled in September 2023.
Jose currently farms 5 hectares of vines located in the villages of San Vicente, Labastida, and Briones. Practices are manual and organic although he is not certified. The vines range in age from 5 to 130 years old with the majority Tempranillo, a small percentage of Viura. The oldest vineyard plots are co-planted with tiny percentages of other grape varieties which include Garnacha and Palomino. When the grapes reach the cellar after being harvested by hand, they are fermented either whole-cluster, or partially destemmed. All fermentations are by indigenous yeasts and extraction is gentle. After pressing the wines are racked into 225-300L French oak barrels and transported to the aging cellar in San Vicente.
