100% Pinot Grigio from 15 year-old, estate-grown vines planted in alluvial soils, rich in clay. Upon arrival in the cellar, the grapes are destemmed and crushed, followed by a soft pressing, static clarification and fermentation exclusively with wild yeasts at controlled temperature in stainless steel vats at 18?C. The wine is kept on its fine lees for several months in stainless steel vats at a controlled temperature. The lees are frequently stirred to add depth and texture. The wine is bottled without the addition of any sulfites whatsoever. The checkered label is meant as an homage to the tiled floor of St. Marks Basilica in Venice. - No Added Sulfites -

Vespolina usually plays the primary supporting role to the great Nebbiolo-based wines of the Alto Piemonte, however, here you have a 100% expression of the varietal. Rovellotti’s Vespolina hails from a organic 0.4 hectare plot in the Ronco al Maso vineyard, with full southern exposure in the commune of Ghemme. The grapes are harvested in the third week of September. Fermentation takes place in stainless steel to preserve the zesty, fresh, wild berry fruit of the grape, with an eight day maceration on the skins, giving the wine a fine and distinct tannic structure.
