A sparkling rose made of 100% Tannat. Manually harvested at full maturity. Grapes are macerated for 6 hours, pressed and spontaneously fermented without their skins. Bottled in the middle of fermentation under crown cap. Unfined, unfiltered, and with zero SO2 added. Make sure the bottles are well chilled, around 46*F to prevent any volcantic eruptions ;) 12% abv
