The Valliant Pinot Noir is made with the same authenticity, simplicity, and raw perseverance as Eden Rift. The wines are romantic and honest, just like the families that have farmed this estate over generations. The 2022 vintage showcases bright acidity and balanced structure. Soft and silky in texture, it is an approachable wine with classic cherry pit, savory, brambleberry, cherry and plum with a refined finish.
Under Vine Since 1849 ? Eden Rift is the oldest continuously producing estate vineyard in California. Located just 20 miles from the Monterey Bay, the 120-acre estate rests on the San Andreas Faultline and is part of the Cienega Valley AVA. Early vintners saw potential in the limestone and dolomite-rich soil, planting Pinot Noir on the estate in 1860. Post prohibition, the focus on Pinot Noir & Chardonnay was lost until 2016 when Christian Pillsbury acquired the estate. Christian assembled a team of young industry professionals starting with winemaker Cory Waller to once again create some of California’s most vivid energetic Pinot Noir and Chardonnay. The extreme terraces and diverse terroir in a single contiguous valley make California’s oldest estate vineyard one of its most exciting new projects.

The new white 2023 Nauda Viura was produced with nothing other than grapes showcasing their minimal-intervention approach. It has a golden color and notes of yellow fruit and pollen, clearly influenced by the contact with the skins. It fermented in old tinajas in contact with the skins for six months after which it was pressed and bottled. It has contained ripeness and 12.5% alcohol, keeping a pH of 3.35, with a bone-dry, faintly tannic finish. 4,745 bottles produced. It was bottled in July 2024.
White grapes that have been partially crushed. Fermentation occurs slowly and spontaneously. There is no pumping or punching down, no cold control, and no chemicals, allowing for a gradual fermentation. After the alcoholic fermentation is finished, the tank is finished and closed for extended maceration with skins. Skin maceration for 11 months, bleeding of the wine without pressing the skins, resulting in a low yield of only 45%. Prior to bottling, light filtration is performed. Wine with minimal intervention and no additions. 585 Bottles produced from .5 of a hectare.

The Petite Verdot and Cabernet Franc come from Paicines AVA, rocky alluvial deposits above the Tres Pinos arroyo. All vineyards experience warm days, cold nights typical of the Central Coast, allowing these late ripening Bordeaux varieties to be picked at high acidity and moderate sugars. Fermented whole berry with a very light crush in open top fermenters, allowing slower extraction, of tannins into the must and lots of oxygen into the fermentation for polymerization of tannins. Los Vecinos Del Campo honors centuries old distilling traditions of Oaxaca and the people whose families have produced these rich spirits for generations. After growing & maturing for 7- 20 years, the local grown agave is harvested by hand. The agave hearts are then slow-roasted underground for 4-7 days to develop the sultry, smoky-sweet flavor profile. After roasting, the pinas are crushed using a stone molino, then naturally fermented in a wooden vat for 7-15 days- depending on time of year. These artisanal mezcals are then double distilled using copper pot stills.
