De-stemmed and vinified in a combination of larger wood tanks and stainless using natural yeasts. Aged 12 months 300-600 gallon neutral barriques.

Trousseau is difficult to cultivate and gives low but regular yields. It has a thicker skin which is more resistant than Poulsard; it is adapting better to global warming.

The nose has a beautiful intensity, notes of pepper, red berries, and autumn leaves. The body is a light ruby color containing silky notes of dark cherries and smoked meats. There is a svory aspect to this wine that is fascinating. The wine continues to open up with time to display how graceful it really is. Enjoy with roast meats, cuts of beef or waterfowl and cheese. Keep for 12 to 15 years.
