Apples: 50% Golden Russet and 50% Roxbury Russet

Tasting Notes: Rustica has stunning aromatics with lightly perfumed with a fresh apple scent and a citrusy electricity. It is silky and full on the mid-pallet, acid-driven, and dry with lighter tannins and subtle herbal notes. A refreshing cider, lightly tannic and perfect for pairing with rotisserie chicken and veggies.

Apples: Porter's Perfection, Dabinett and Northern Spy

Tasting Notes: This wild-fermented cider undergoes three partial fermentations, each carefully interrupted at the perfect moment to preserve the fresh apple character while still adding many layers of complexity. The scent of Dabinett is very prominent, and this vintage was sweeter than past vintages.

Limited release, artwork by Keya Tama. With a name meaning crab Basque, this cider was barrel-aged for 6 months in neutral oak barrels to complement the Manchurian Crab's grippy tannins. Fermentation started spontaneously and then white wine yeast was added to complete the fermentation. Minimal sulfur use, Unfined, Unfiltered. 175 Cases. 8.5% abv

Apples: 60% Manchurian Crab, 30% Brownsnout Crab and 10% Northern Spy

Tasting Notes: Txangurro boasts enticing aromas of ginger, orange zest, and sherry. It has a juicy, apple-forward palate with hints of salted lemon, unexpected minerality and refined tannins. It also has a slight touch of effervescence and textural complexity thanks to a partial malolactic fermentation.

Apples: Redfield, Somerset Redstreak and Tremlett's Bitter

Tasting Notes: This cider boasts a well-rounded mouthfeel and a rich color derived solely from apples. It features extremely smooth yet well-developed tannins, offering a unique textural dimension rarely found in cider. On the palate, you'll experience tart cherry and cream notes, while the nose hints at guava and citrus.

Organic / Biodynamic

Apple, pear, and gardenia on the nose. Medium body with concentrated orchard fruits and a persistent finish. 100% estate fruit grown on the Macari family vineyard.

Ravines Cabernet Franc is deliciously fruit-forward and spicy with perfect balance, soft tannins and a round mouthfeel. A polished style with ripe red and black fruits, sultry spices, earthy aromas and a peppery finish. - Winery

For an entry-level wine this is a stunner! Wonderful nose of white peach, lemon blossom and jasmine. So succulent, with excellent ripeness and concentration, but nothing flashy or any hint of opulence. The best thing about the wine is the long, very silky finish. And this is properly dry. Drink or hold.

A subtle and textural dry riesling that belongs to the new school of Finger Lakes dry rieslings. Restrained peach and tangerine fruit with some floral nuances and lees complexity. The acidity is already beautifully integrated. Excellent mid-palate density and a long salty finish completes the impressive picture. Drink or hold.

The bulk of Red Tail Ridge’s production is Riesling, but Nancy and Mike have also planted several clones of Chardonnay, Pinot Noir alongside small experimental plots of Blaufrankisch, Dornfelder and Teroldego.
