45% Blaufrankisch, 15% Chardonnay, 35% Cabernet Franc and 5% Cabernet Sauvignon grown along Seneca Lake in the Finger Lakes. The grapes for this wine were co-fermented in one-ton bins with around 30% of whole cluster fermentation. No adjustments were made to the fermentations and they proceeded at ambient temperatures using ambient wild yeast for both primary fermentation and malolactic. When the fermentations were winding down, they were pressed in a basket press and racked into older (7-10-year-old) French Oak barrels where they remained for a year and a half. The barrels were blended and a small sulfur addition (30ppm) was made before being bottled unfined and unfiltered. 11.8% abv

‘Burbuja’ comes from a pure Palomino plot of 40-50 years old vines named
‘Plantalina’ in Balbaína Alta, which is the most “Sanluqueño” vineyard of Jerez due to its
proximity to the sea but still boasts the concentration of Jerez. This vibrant vineyard has been
farmed organically for more than 15 years and is of great quality.

Very little winemaking here as this classic ‘Método Ancestral’ wine is bottled
prior to finishing the alcoholic fermentation and before finishing the total consumption of sugars.
The wine next rests horizontally so the lees are in contact with the wine for an additional 8
months. Then, the bottles are positioned ‘boca abajo’ face down so the lees settle into the neck of
the bottle from where they rest for three weeks before disgorging quickly, refilling the bottle
with the same wine from any loss, and finally crown-capping. Released immediately. This delicate and lacy single vineyard ‘Pet- Nat’ Palomino has soft pillowy bubbles that are floral and fresh - the subtle aromas entice with notes of hay, apple pear, lanolin, aloe and sea
spray reminiscent of a long day at the ocean. On the palate, the salty plush foam has just the
perfect amount of structure and fizz to awaken the palate and express its organic, sunny terroir
and natural state of the Palomino grape. A delightful naturally sparkling wine.

A clean, crisp white wine consisting of Chenin Blanc, Chardonnay and Melon de Bourgogne.
Inspired by the wines of the Loire Valley and vignerons like Didier Barouillet of Clos Roche Blanche (who was an over-the-phone consultant on the project), Thierry Puzelat, and Marc Ollivier of Domaine de la Pépière. Loire inspired wines made in the Willamette Valley of Oregon.

Owned by the Suriol family, Cellers de Can Suriol del Castell is known for making wines and vintage Cava with personality in the organic winemaking tradition. They make wines under the Suriol brand which are all estate bottled fruit and then they make the Azimut line from purchased grapes from their neighbors, all of whom work organically. The Can Suriol vineyards and winery are situated in Alt Penedes, Province of Barcelona, Catalunya. This region is justifiably famous for producing fine wines and cava. Grenache, Cabernet Sauvignon, and Merlot from L'Ardeche. 10 day carbonic maceration in cement tanks and aged in fiberglass and stainless steel. A full-bodied, lush red that is seamlessly put together. This is super clean for a natural wine, especially as a sans soufre wine.

85% Mencia 15% Alicante Bouschet (and a pinch of Godello). A medium-bodied expression of Mencia with freshness galore and fine tannins. Gregory Perez’s more natural approach to winemaking is evident when first pulling the cork. A bit of gas releasing is common, nothing a quick decant or pouring two glasses won’t fix. Floral in the nose with bright crunchy acidity on the palate. Red fruit is on full display here with an underlying spice. Unoaked.

Organic / Natural

Golden-amber-colored, an exotic bouquet of sugar-dusted ginger, dried nectarines, crushed green apple, geranium and mint. This is powerful and deeply textural, with a pretty inner sweetness balanced by brisk acids and tart orchard fruits, complemented by savory brown spice and a mind-bending addition of cocoa toward the close. For all of its density, the Praruar turns squeaky-clean through the finale, yet still full of lively energy, resonating on floral-tinged peaches and pears.

Produced exclusively from Catarratto grapes grown on the Il Censo estate outside of Palazzo Adriano; vineyards are farmed organically and grapes are harvested manually, with harvest occurring usually in October; the grapes maintain contact with the skins for two to three weeks, the length of the maceration depending on the vintage; only indigenous yeasts are used during fermentation and no temperature controls are utilized; the wines is bottled without being fined or filtered.

80% Xarel.lo, 20% Macabeu. La Fita - Els Arpiots is a white wine that embodies the essence of its origins –Penedes- . A blend of Macabeu and Xarel.lo, traditional grape varieties of Penedès, creates a fresh and light wine. It bursts with aromatic intensity, evoking the Mediterranean with scents of white fruit and flowers. Its palate is gentle and straightforward. Manual harvest in 15kg boxes, destemming and very gentle pressing. Static settling in stainless steel tanks followed by fermentation with indigenous yeasts from the vineyard at high temperature (18°C-20°C). Once fermentation is finished and malolactic done, the wine ages for 5 month on the lees.

Inspired by the fresh and lively nouveau wines of Beaujolais, this bottling is the first glimpse of this year’s vintage and its vibrant energy naturally accompanies the celebrations of the season. This wine goes through 100% carbonic fermentation with native yeast and is bottled unfined, unfiltered and without sulfur. It’s alive and ephemeral – meant to be enjoyed right away. 12 % abv

65% Listan Prieto, with the rest of the wine being a blend Listan Blanco, Vijariego Negro, Verdello, Gual and Albillo Criollo from different vineyards, all vinified separately. The Listan Prieto is fermented whole cluster in open oak barrels, Verdello and Negramoll are direct pressed and fermented in oak barrel, and the Gual and Vijariego Negro are destemmed, fermented on the skins, also in oak. Aged for 8 months in used oak barrels. Unfined, unfiltered. Very light color, floral, with light tannins and texture. 350 bottles made.

100% Nebbiolo grapes from our younger and less exposed vines, which produce less concentrated fruit. Vindabeive is our picnic wine! It's the juicy result from a carbonic maceration of Nebbiolo which comes from the higher part of our vineyards and we pick a little earlier then the rest. Grapes spend five days on the skins, roughly half as whole bunches, before being pressed off to cuve for just a couple of months. The wine was bottled just a few months after the harvest, retaining a beautiful vibrancy. With just a hint of tannin, this light, bright and easy take on the grape is just the thing for your next barbecue.

The grapes are picked ripe when they have full flavor, so the wine is tasty and ripe, round and lush, which is the house style here. Focused zippy acidity balances the flavors of pear, herbs, peach and apple.

A field blend of Treixadura, Albariño, Godello, Lado, Verdello, Torrontés and others sourced from O Forcadal, a parcel planted in 1910 in the village of Gomariz on clay with blue and red schist (Ribeiro zone, without appellation). Macerated on the skins for 3 hours before pressing. Fermented and raised 8 months in neutral 500-700L barrique.

‘Heaven and Hell’ is both a reference to the ‘good angels’ of the vines in the ‘infernal’ heat of the summer, and X-L Sebio’s metalhead tribute to Black Sabbath’s track of the same name
