Over 52 different soil types can be found here, mostly based on volcanic rock and slate. The Melaphyr trocken, is named for a rare type of volcanic rock found in the estate parcels used for this bottling. Without getting too scientific, this is a "porphyritic igneous rock" / Mesozoic basalt. It?????s one of the volcanic soils the central Nahe contains, and it can provide aromas of soursop, lemon-balm, violets and ginger.

The wine is called “Senior” as a tribute to Florian’s grandfather who was already in the 1950s famous at least in the Saar Valley for his dry Riesling. So the story goes, he would walk through the cellar and taste all the barrels and then write “Senior” on the cask he wanted for his own drinking. Nine times out of ten, the cask he took was good ole “Fass, or barrel, #6,” sourced from parcels in the western-most part of the Kupp (to the left of the Kern site if you look at the Lauer Grand Cru map, available in the gallery to the left). This is one of the cooler parcels, farthest away from the moderating influence of the Saar River. As it happens, this wine nearly always ferments to a precarious, near-impossible-to-describe balance, in this gray area that is not at all sweet, but not legally dry either. I refer to this style of wine as “dry tasting.” In the old days, “dry” Saar wines often needed a little bit of residual sugar, not to make them taste fruity, but to just counter the ferocious acidities. So this is “Senior” not only named after Florian’s grandfather, but after an old-school style of wines common for the Saar. And while it is fashionable now to do natural ferments, and to seek a more natural balance for Rieslings, the Lauers are famous because they have been doing it for centuries, before it was in vogue.
You just have to taste this wine; while it normally ferments to off dry levels, the wine is dry tasting yet textural with amazing depth and clarity. Don’t worry about how dry or not it is – it’s just delicious. Focus on that.

Fabelhaft means both ‘fabulous’ and ‘containing fables.’ The label is of a German fable in which a pair of ducks fight over a frog for dinner, only to be captured by a chef themselves. The wine is a blend of all the different estate vineyards to showcase this part of the Mosel. Only Riesling from steep slopes is used, and grapes are hand-harvested and naturally fermented. SO2 used only at bottling.

The estate is a joint venture connecting two families: the Kettern family, who have been making wine in the Mosel for several hundred years, and the Niepoort family, led by famed Portuguese winemaker, Dirk Niepoort. Dirk is known for his different collaborations and works with winemakers across the globe. In addition to his travels in Spain, France, and Italy, he had traveled to the Mosel in his youth and befriended the late Wilhelm Haag, who passed away earlier this year. Wilhelm was an iconoclast and taught Dirk that “great wine didn’t have to be powerful and rich to be wonderful.

50% Chardonnay, 50% Weißburgunder. Spontaneous fermentation in new 1200L oak barrels (called Stückfass). Aged in those same for seven months, then moved into inox tanks for four months of settling. Unfined, unfiltered, 25mg/L SO2 added. Dominik says this wine is probably the most “classical”in his lineup: you’ll see the lightest influence of the new wood, which he calls ‘a little bit of 90’s kitsch,’ with light notes of pineapple and coconut, but there’s still great tension, lovely structure, and fine acidity.
