Shows fine balance and length; this just needs time to absorb the oak. Best from 2027 through 2043.

The 2022 PSI is clean, expressive and open, much more approachable than the more reductive 2021 that I tasted next to it. It's primary, fruit-driven and precise. "The fruit selection was better in 2022," explained Sisseck. It has contained ripeness and a polished texture and is sleek and elegant, with fine tannins. It feels like a step up from 2021. This was also the final blend waiting to be bottled—clarified, sulfur added and everything, so pretty much the wine that is going to be bottled

This cuvee is sourced from vines the age of which is between 45 and 70 years. A wine of exceptional concentration for a village level appellation, this wine is always a true expression of the kimmeridgian soils that make Chablis so distinctive. Aged for thirty months before release, Defaix’s old vines Chablis is richly dense with a classic "pierre a fusil" bouquet and long mineral-infused finish.

The 2021 Game Trail exudes finesse from the very first taste. Crushed flowers, dark red-toned fruit, cinnamon, leather, menthol and dried rose petal build effortlessly as the 2021 shows off its undeniable class. Cabernet Sauvignon at 1,400 feet in the Yorkville Highlands is utterly sublime in this bottling from Marietta.

The 2021 Game Trail Cabernet Sauvignon is crunchy, refreshing and easy to drink. It's scented of fresh blackcurrants and cherries, plus nuances of garrigue and charcuterie. The full-bodied palate is light on its feet with softly chalky tannins, bursts of mouthwatering acidity and a long, mineral-driven finish. You could drink this on its own or have it with medium-weight dishes at the table.

The old-vine white 2021 Vinhas Velhas Branco was produced with the fruit from some 15 small plots of old vines aged between 60 and 130 years of age and planted with a myriad of old varieties (S??ria, Bical, Fern??o Pires, Encruzado, Arinto, Cerceal and Malvasia Fina) on slopes with granite soils. It's inspired by the natural vinification of some Burgundy wines. It fermented with indigenous yeasts and matured in 500-liter barrels for 12 months and a further 10 months in stainless steel. It has moderate ripeness and alcohol (12%) with a pH of 3.33 and 5.29 grams of acidity. It has an incredible nose that is nuanced, complex, elegant and changing, with notes of herbs, wild flowers and earth. It has a very tasty and saline palate that is subtle with great purity of flavors, clean and precise. It reminds me of some whites from Ganevat. 7,900 bottles produced. As always, it was bottled with full malolactic, unfiltered and unfined. It was bottled in April 2023.
