Bonanza is a California Cabernet Sauvignon that speaks to the simple pleasures of day-to-day life. Created by Chuck Wagner of Caymus Vineyards this wine is delicious accessible and enjoyable over a meal. Its made from the bonanza of our great state vineyard sites that hold potential to produce good Cabernet but are often overlooked. Features flavors of luscious fruit dark chocolate and silky tannins.

Bonanza Chardonnay is highly enjoyable and a true expression of the Bonanza name. This Chardonnay is not typical, meaning it is not made in a buttery, oaky style. Instead, it is bright and fresh, with a vibrancy that brings out the natural goodness of the varietal.

The Valliant Pinot Noir is made with the same authenticity, simplicity, and raw perseverance as Eden Rift. The wines are romantic and honest, just like the families that have farmed this estate over generations. The 2022 vintage showcases bright acidity and balanced structure. Soft and silky in texture, it is an approachable wine with classic cherry pit, savory, brambleberry, cherry and plum with a refined finish.

Under Vine Since 1849 ? Eden Rift is the oldest continuously producing estate vineyard in California. Located just 20 miles from the Monterey Bay, the 120-acre estate rests on the San Andreas Faultline and is part of the Cienega Valley AVA. Early vintners saw potential in the limestone and dolomite-rich soil, planting Pinot Noir on the estate in 1860. Post prohibition, the focus on Pinot Noir & Chardonnay was lost until 2016 when Christian Pillsbury acquired the estate. Christian assembled a team of young industry professionals starting with winemaker Cory Waller to once again create some of California’s most vivid energetic Pinot Noir and Chardonnay. The extreme terraces and diverse terroir in a single contiguous valley make California’s oldest estate vineyard one of its most exciting new projects.

91% Cabernet Sauvignon 6% Petite Verdot, 3% Cab Franc. Cabernet Sauvignon sourced from 3 vineyards: the 60yr old Brigantino Vineyard, the 45yr old Wheeler Ranch, and the 75yr old Tres Pinos Creek Vineyard. The Petite Verdot and Cabernet Franc come from Paicines AVA, rocky alluvial deposits above the Tres Pinos arroyo. All vineyards experience warm days, cold nights typical of the Central Coast, allowing these late ripening Bordeaux varieties to be picked at high acidity and moderate sugars. Fermented whole berry with a very light crush in open top fermenters, allowing slower extraction, of tannins into the must and lots of oxygen into the fermentation for polymerization of tannins. Pressed after approximately 20 days. Aged for 11 months on lees in mostly neutral barrels with a couple of active oak barrels sprinkled in. 13.2% abv

Ravines Chardonnay is made with a process dating back to the Roman times: appasimento. Chardonnay grapes are partially dried in the sun, yielding a wine with lush aromas of pear, fig, citrus and hazelnut. As a cool climate Chardonnay this wine expresses fresh fruit flavors, a distinct mineral tinge, hints of butter and lightly toasted French Oak. - Winemaker notes

Ravines was created by Morten and Lisa Hallgren in 2000. Morten, a French-trained Oenologist, came to the Finger Lakes from his family’s centuries-old estate in the South of France. He and his wife and business partner, Lisa, convinced of the potential for fine wine making in the Finger
Lakes, opened their original tasting room on 17 acres of sloped, shale stone soils nestled
between two deep ravines on Keuka Lake. They focus on making fine, classically-styled wines
that allow for the cool-climate characteristics to be shown without compromise - creating their own
unique expression within the Finger Lakes wine region.

Oregon and Washington fruit collide to shout, "gamay, gamay, hey." The wine is a mix of whole cluster carbonic maceration and traditional fermentation done in stainless steel, concrete and neutral oak. It is packed with aromas and flavors of strawberries, dark chocolate, pickled watermelon and cut grass. The acidity will make you feel alive.

Winery: Gamay is simply the most delicious, delightful, versatile grape. It hails from the Beaujolais region and also flourishes in the Loire Valley of France, and has witnessed rapid popularization in growth in the U.S. over recent years.

We fell hard for the carbonic maceration fermentation technique while learning about and making wine in the Beaujolais region. Produced like a traditional Beaujolais-Villages wine, we utilize carbonic and semi-carbonic maceration as the layering components.
