Every year, Billecart-Salmon vinifies base wines from a greater number of parcels than it actually needs for the production of its main cuvees. The tasting committee tastes each of these base wines and selects only the ones that match the standard and the style of Billecart-Salmon. Some of the wines that are not selected are bottled to be part of a second wine from the house, Inspiration 1818.

A blend of 50% Pinot Noir, 25% Pinot Meunier and 25% Chardonnay from the Montagne de Reims and the Côte des Blancs; about half of the juice comes from 1er Cru and Grand Cru vineyards.

The Marie Weiss label is produced by the superb, small Champagne house of Ployez-Jacquemart, which is located in the small village of Ludes on the Montagne de Reims. The Marie Weiss bottling is produced entirely from purchased grapes or must, and the new release was quite a lovely bottle. The refined and complex nose wafts from the glass in a blend of apple, white peach, brioche, a nice touch of fresh nutmeg and a lovely base of chalky soil tones. On the palate the wine is full-bodied, crisp and wide open, with good mid-palate depth, lovely focus and complexity, elegant mousse and lovely balance on the long and classy finish. This is not quite as structured out of the blocks as the Ployez-Jacquemart Brut NV, which really is built to age long and gracefully, and the Marie Weiss is a lovely counterpoint from the Ployez family for those who really want to drink their bubbly right after it is purchased.

Straw yellow and with a golden hue in color, the Pol Roger NV Reserve Brut displays a brilliant, perfectly ripe but also fresh, highly elegant and refined fruit aroma on the nose; think of cooked pip fruits like pears and apples, but also quince-confiture and yellow stone fruits, such as apricots and peaches intermixed with vanilla, brioche (pain aux raisins), some nutty flavors and also some white floral notes. On the palate, this medium-bodied Brut is as round (if not pretty sweet) and fruit-driven as it is delicate, pure and very elegant. The mousse is deliciously fine and leads this charming and perfectly balanced fizz to a long, aromatic, stunningly dry and slightly mineral, impressively long finish. This is extremely well done Champagne from equal parts of Pinot Noir, Meunier and Chardonnay sourced in 30 different crus. This Reserve includes 25% of reserve wines and was dosed with nine grams per liter.

The "White Foil" is sourced from top quality vineyards in Montagne de Reims (Pinot Noir), Vallee de al Marne and Petite Valle d'Epernay (Pinot Meunier) and the Cote des Blancs (Chardonnay). The Pol Roger family takes extreme pride in more than 160 years producing some of world’s finest Champagne. Founded in 1849, Pol Roger is one of only a few Grande Marque Champagne houses that remains family owned and operated. The NV Extra Brut Rose de Meunier is very similar to the Ultradition version (the blend of vintages changes slightly) but bottled with 2.5 grams per liter of dosage. The lower dosage seems to bring out an extra kick of savory intensity to play off the dried rose petal, cinnamon, orange peel and crushed red berry fruit. This release is done as a blend of lots that are pressed as white (Blanc de Noirs), saignee and still red wine. I loved it.

A cuvee blended from 77 crus, every one unique. The grape variety traditionally used by Mumm, Pinot Noir (45%), endows the wine with structure and strength; Chardonnay blend (30%) that ensures both finesse and elegance. The fruity, sharp and well-rounded notes of Pinot Meunier (25%) complete the blend. A separate pressing and vinification for each grape variety and cru, to ensure a wide range of aromas and taste sensations. 25% to 30% addition of reserve wine which brings depth to the final blend. A residual sugar content of 8g/l to remain constant and true to the Maison MUMM style.

Georges Hermann Mumm is the man to whom we owe the House's iconic cuvee. In 1876, to assert the quality of its champagne, the House decided to adorn their bottles with a red silk ribbon, a reference to the Ordre de Saint Louis and to the Grand Cordon de la Legion d'Honneur. Its success was immediate: a symbol of Maison Mumm's excellence and expertise, the Cordon Rouge cuvee henceforth became a true benchmark all over the world.

The NV Brut Rose Prestige is gorgeous. It shows lovely length and focus in an understated style that is quite appealing. There is tons of depth to the fruit as the wine opens up in the glass. The Rose Prestige can be enjoyed as an aperitif, but it also has enough body to pair beautifully with a wide range of foods. This is a great version of the house?s Rose. This is Lot L1204SZ07700. Camille Saves rose Cuvee from the Bouzy Grand Cru terroir with a blend of two years. The NV Brut Rose Grand Cru is arguably the most complex wine in this range. A vinous, deeply resonant Champagne, the NV Brut Rose Grand Cru blossoms in the glass with gorgeous depth and richness. The Rose is 60% Chardonnay and 40% Pinot Noir, with the Pinot driving the wine's texture and pure sense of volume. Saves's Rose is often one of the best, as it is again this year. Dosage was 8 grams/liter. Alc: 12%.

2019 Base. The NV Brut Blanc de Blancs Grand Cru is a striking wine, and frankly one of the best wines I have ever tasted from Courier. Pure Blanc de Blancs is unusual in Ambonnay, where Pinot plays the leading role. Courtier's NV presents an intriguing combination of the richness that is typical of Ambonnay married to deep, expressive varietal Chardonnay fruit. Smoke, ash, and crushed rocks are all layered into the energetic, vibrant finish. This is a flat-out delicious, utterly joyous Champagne from Courier. 100% Chardonnay

The NV Brut Rosé is flat-out delicious. The word ’balance’ is so overused in wine, but I really can’t think of a better way to describe the Brut Rosé. It is not nervy nor overly rich, but just impeccable in its poise and overall harmony. A healthy amount of Pinot lends volume and intensity to this Chardonnay-based Rosé. This is the sort of wine that is opened and disappears within a few minutes. This release is a blend of vintages 2017 and 2016. Disgorged: August, 2019.

The 2019 Brut Nature Blanc de Noirs L'Arbre, from a parcel in Pouillon, is seriously impressive. Bright, focused and super-polished, with tons of aromatic presence, L'Arbre shows a refined, elegant side of Meunier that stands apart from the typically bigger style found in most mono-varietal bottlings. There's tons of energy and vibrancy. The 2019 feels a bit severe, but some of that may be attributable to its recent disgorgement. Naturally the vintages are different, but the 2018 version is quite a bit more open.

100% Pinot Meunier from the single parcel of Voyet in the Marne village of Pouillon, this is the Cuillier family's most historic vineyard. Sandy soils over limestone. The winery embraces regenerative principles of cover cropping and low-/no-till farming to increase soil organic matter and to preserve and enhance biodiversity. Applies homemade composts to enrich soil and incorporates Vitiforestry, which is the intentional integration of trees into the vineyards (a.k.a Agroforestry when integrated into other agricultural crops). Indigenous yeast fermentation in small stainless steel tank. Aged in tank for 12 months followed by 36 months sur lattes. No fining or filtration, disgorged by hand, zero dosage.
