Los Bermejos is on the easternmost island of Lanzarote, only 125km from the African coast where conditions are extreme. A volcanic explosion that lasted from 1730-1736 covered the entire island in lava and ash 3-5 meters deep. Consequently, each vine must be planted in a hole or hoyo that breaks through that infertile volcanic crust of petrified lava to the organic matter that can nourish it. The wind, which acts as a natural fungicide, is so ferocious that each hoyo is surrounded by rock walls for protection. The flora on Lanzarote – including the vines – cannot grow very high; there are not enough nutrients in the soil to support sprawling greenery. Yields are minuscule (16 hL/ha) and each berry is concentrated with flavor. All vineyard work is done meticulously by hand. Some of the wines are certified organic, depending on the vintage. Ignacio supplements his crop with purchased fruit from growers who share his vision of sustainable viticulture; with such low yields the winery would have to own most of the land on the island in order to produce financially sustainable quantities of wine from exclusively proprietary grapes.

It is vinified in stainless steel. 20% carbonic maceration. 30% goes into American oak for 2-3 months before release.
Augustin explains that you find good acidity from the Listan Negro that grows at around 600m, and good body from the vines that grow around 200m. Vinifying by parcel has allowed him to really get to know the character of each of his vineyards.

This is austere and discreetly citric, with green apples and a smoky note. The palate is balanced and bright, with a seductive texture that really makes this harmonious. Trenzado, which means threaded or braided, is the name given to the unique form of trellising found in the islands. The 2021 7 Fuentes was quite similar to the 2020 that I tasted next to it, but this year they merged the 7 Fuentes and 7 Fuentes El Lance into a single cuve of Listn Negro and 5% Castellana Negra, so it has grapes from more vineyards, 30 different ones. It fermented with 20% full clusters in concrete with indigenous yeasts and matured for 11 months, 50% in concrete and 50% in used 500-liter oak barrels; then it was blended and kept in stainless steel for a further eight months. It has 12.63% alcohol and good acidity and freshness. This is quite approachable and less reductive and at the same time fresher. They have been working to increase the pH of the soil to get less reduction in the wines; each year as the soils are healthier, there is less reduction in the wines.

65% Listan Prieto, with the rest of the wine being a blend Listan Blanco, Vijariego Negro, Verdello, Gual and Albillo Criollo from different vineyards, all vinified separately. The Listan Prieto is fermented whole cluster in open oak barrels, Verdello and Negramoll are direct pressed and fermented in oak barrel, and the Gual and Vijariego Negro are destemmed, fermented on the skins, also in oak. Aged for 8 months in used oak barrels. Unfined, unfiltered. Very light color, floral, with light tannins and texture. 350 bottles made.
