Apricot, chamomile, dried flowers and hazelnut are some of the many notes that take shape in the glass. Beautifully exotic, aromatic and polished, this is a wine of rare distinction and class. The Bianco is 100% Trebbiano that sees a brief period of two days on the skins. Fruit is picked a bit earlier than the Trebbiano for the Tin version. This is conceived as the estate's entry-level white, but it has plenty of pedigree.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e100% Trebbiano. From organically farmed vines on sandy, rocky, clay-limestone soils sourced from a grower in Lamporecchio near Pisa. The bunches are harvested by hand and destemmed; the fruit is fermented spontaneously with native yeasts and without sulfur  or temperature control in concrete tank. The maceration is 2-3 days. The wine is aged in cement and bottled without fining or filtering and with a small dose of sulfur.
