Pedro Ximenez grapes are left under the sun to transform into raisins before pressing. The fermentation is interrupted by the addition of brandy leaving a very high residual sugar content. The wine is then aged in a Solera system in oak barrels resulting in a full rich, nutty dessert style sherry.
