Christian Bonfils, with support from his wife Cathy (formerly of Pommard), now guides the nearly 50 hectares of vines here with a wise and restrained eye. Farming practices remain conscientious of the effects upon the earth. Only organic fertilizer is added to the soil, which is mechanically maintained, and grapes are handpicked at harvest. Christian prefers to make his wines in a more traditional style; they are marked by a delicate approach to fruit.\u003cbr\u003e\u003cbr\u003eGrown in clay soil with limestone in the slopes and lots of gravel on the terraces, the Gigondas come from 40 to 50 year old vines of Grenache and Syrah. The grapes are hand-harvested and crushed, then undergo a 2 to 3 day cold maceration. A traditional style of fermentation follows and lasts about 20 to 30 days with daily delestage.
