70% Chardonnay and 30% Pinot Noir that is organically farmed. Bright bouquet revealing more minerality than floral components. The palate is broad and complex displaying a slight yeast element and delightful salinity. The clean dry finish lingers on and on. It is obvious right away that you are drinking something serious even though the price tag may lead you to believe otherwise. This is most likely due to the extended aging. Salute Castello Bonomi!

After a gentle pressing to extract only the best must, the vinification takes place using cold techniques, which make it possible to enhance the aromas and finesse of the wine; fermentation occurs at a temperature of about 14??C. After the first fermentation in steel and wood, part of the cuv??e ages for about 8 months at controlled temperature before taking foam. CruPerdu then evolves and ages patiently in bottle for over 60 months.
